I regularly receive requests for recipes when I'm on jobs such as cooking for retreats and private events. For someone who is always tweaking and adjusting often with very little written down, the traditional recipe book format can feel a little restrictive, and sometimes, the food I cook or dishes I make don't fit neatly into that structure. But that's no reason not to find a way to share them!

so I’m putting together some recipe collections to share with you some of my most requested recipes, and great things to do with fruit and vegetables I’ve learnt over the years as a classically trained private and retreat chef. As always, I focus on flavour first—creating vegetarian and vegan food that is delicious and relatable.

as well as full on meals, i also want to share the simple tips and tricks or flexible cooking methods that can help you start to make your vegetables stars even when they are accessories!

This is my first collection of written recipes, focusing on plant-led, mainly vegan (or easily made so) dishes and whilst there are many recipes in a format you will recognise, some of them are simple descriptions or stories, focusing on the sensory input rather than rigid instructions. And of course, my inescapable sweet tooth means there are some bakes and desserts in here too!

Whether it’s simple charred baby gem lettuce or my favourite vegetarian curry, this is the food I love to eat, cook and share—from complete meals to my favourite ways to cook vegetables that make them a memorable part of any meal.
