Week 1:
Your new kitchen Mindset
Reprogram your mindset in the kitchen, start to think about food and cooking in a new way, and make use of the practical tools in the course to learn how to change your internal dialogue and approach cooking from a place of joy and self-care
Week 2:
master your Larder
Time to look at your larder! Have a peek into Sal’s larder and learn the truth about what you really need in your cupboards. Start to think about your larder conceptually to lay the foundations for combining ingredients more intuitively later in the course.
Week 3:
produce & seasonality
Let’s talk produce, seasonality and choosing ingredients/combinations more intuitively. We live in an increasingly globalised food market and in the UK we have access to every ingredient imaginable. So how do you navigate choosing ingredients? We’ll look at seasonal produce in the UK, how to make the most of it and why eating seasonally is so great. We will also discuss global food seasons and options to approach buying ingredients in a more sustainable but also realistic and intuitive way!
Time to get hands on. The practical building blocks for your intuitive cooking journey aren’t recipes but accessible concepts, techniques and ideas that you can engage with and develop your own relationship with, taking them forward to use in your everyday cooking from now on. We will look at basic cooking methods and how and why you would use them with different ingredients. From quick to slow cooking, eating raw to charring, you’ll start to form a lasting emotional and intuitive connection to these simple cooking approaches. We will also look at the basic principles and methods of seasoning and start tasting as we cook!
Week 4:
Cooking methods & seasoning basics
I could do a whole course about herbs on their own! This session is all about these star flavour makers and giving you the conceptual tools to make herbs an integral part of your cooking. We will look at the difference between hard and soft herbs and how and when to use them in the kitchen from an intuitive rather than a prescriptive approach. Take seasoning to the next level by including herbs in your flavour repertoire everyday.
WEEK 5:
Herbs
Just like herbs, spices are your tastebuds’ best friends. Not just for complicated spice mixes, or traditional recipes from afar, spices should form a core part of your flavouring approach, and not be reserved for curries and exotic dishes. Sal will give you the low down on her favourite spices, and conceptual ways to use them in various cooking methods so that you’ll only be a sprinkle away from delicious food, without having to rely on instruction. This also completes a multi-layered approach to flavouring food which will ensure everything you make packs in maximum taste and fun.
WEEK 6:
Spices
Texture is often overlooked as a priority in our home cooking, but paying attention to the physical eating experience offers an additional area to layer on some magic in your food. From a crunchy sprinkle to a harmonising sauce, understanding how to balance texture in your food is one of the keys to maximising the pleasure you get from eating simple, intuitively prepared food. We will also look at how the combination of our new found seasoning skills can be combined to achieve balance and depth really simply and intuitively.
week 7:
Texture & Balance
In the final week of the course we bring together all the ideas and concepts learnt in the course to look at how this works in practice when you’re faced with a fridge full of ingredients and no recipes or plans. You’ll let your new intuitive connection to food guide you in making decisions about meals and ingredient combinations, and your new view of food to breakaway from traditional constructs when it comes to how meals should look. Then it’s over to you for a lifetime of exploring, cultivating and loving your new relationship with food and cooking!
